Thanksgiving history and the traditional menu

Today November 22, 2012 is Thanksgiving holiday celebrating in USA. This holiday is celebrated not only in USA but also in Canada (2nd Monday in October), Liberia (1st Thursday in November) and in Norfolk Island on last Wednesday in November. 

Thanksgiving is a religious and cultural tradition. Its meaning is to give thanks to god for good harvest, a good growing season and for the early spring. 

The first Thanksgiving was held in 1621 with the Pilgrims and Indians even this first Thanksgiving was not a holiday but a gathering. But since than, it’s an official holiday and it is celebrated every year. 

This holiday is special also about the menu. There are traditional recipes, especially with turkey as a symbol of this holiday. We propose you some traditional recipes to celebrate it today. 

Thanksgiving traditional menu

Mashed potatoes

It’s a simple and quick recipe. 

Ingredients
5 pounds cubed peeled baking potato + 3/4  cup of warm milk + 2 tablespoons butter + salt + black pepper

Preparation
Cover the potatoes with water and bring to a boil. Let them for 15 minutes than drain. Mix in a bowl the milk, butter, salt and pepper. Add the potatoes and put them on a mixer until is created a smooth. When it’s ready, serve it.

Roasted Brussels sprouts with garlic and ham

Ingredients
3 pounds Brussels sprouts +1 slice white bread + 1 ounce chopped ham + 2 tablespoon lemon juice + olive oil + 3 garlic cloves + parmesan cheese + salt + cooking spray

Preparation
Process the bread until crumbly and put crumbs on a baking sheet. Bake them for 5-min at 400°. Mix the sprouts with the other ingredients and put them to bake for 30 min at 370°. When you serve it, sprinkle over sprouts some parmesan cheese.

Roasted turkey

Remember you have to brine the turkey 12 hours before roasting it.

Ingredients
One turkey (12 to 14 pound) with fat removed + 1 carrot + 1 celery rib + 3 tablespoons melted butter + 2 medium onions + 1 1/2 cup of kosher salt + 1 cup sugar

Preparation
Put the turkey in water with the salt and the sugar and refrigerate for 10-12 hours. Than remove the turkey from the brine and rinse it with cold water. Tie the turkey legs with kitchen string, also the wings. Place in the turkey cavity the half of onions, celery and carrot. Brush the turkey with melted butter, put 1 cup of water into the pan and roast it at 400° for 45min.
Add one more cup of water to the pan and let it for 1 hour and 45 minutes to roast. Every 30 minutes, baste it with the pan juice and add half cup of water. Rotate each time the turkey, a quarter turn to make sure the juicy breast meat. When you realize the turkey is done, take it and cover with foil for 20-30 min. 

Pumpkin Gingersnap tiramisu

Pumpkin, as turkey is a must on Thanksgiving menu. There are so many recipes and desserts with pumpkins, but we have choose the Pumpkin Tiramisu
Ingredients

15 ounce pumpkin puree + 1 quart whole milk + 3 teaspoon gelatin + 6 egg yolks + 1/2 cup cornstarch + vanilla extract + 1 pound gingersnap + 1 teaspoon cinnamon + 2 cups mascarpone + 1 ½ cup sugar + 1/4 teaspoon salt + 2 tablespoons water + 3tablespoons apple brandy

Preparation

Let the gelatin stand in the water for 5 min. Mix the cornstarch, yolks, salt and 1 ½ sugar until the sugar is moistened. From the other part heat the milk until steaming. Add 1 cup of milk to the yolk mixture. Than put it into the milk in the saucepan and cook it slowly about 5 min. Add the pumpkin puree and whisk for 1 min. Turn off the heat and add gelatin, cinnamon and vanilla. Whisk with mascarpone too.
Microwave in a bowl the apple brandy with 1 tablespoon of sugar until the sugar is dissolved. Brush the gingersnaps with brandy and custard. Sprinkle half of the crushed gingersnaps on top and cover with a plastic wrap the tiramisu. Let it in the refrigerator all night. Before serving, sprinkle it with the remaining gingersnaps.
